After fertilization, at the same time that the seminal rudiment becomes seed, the transformation of the walls of the ovary begins to form the fruit. The fruit can be considered as the ‘organ that contains the seed until the end of its maturation. The fruit not only protects, but also assists in seed dispersal, either actively or passively. Some seeds cannot germinate unless they have first passed through the digestive tract of an animal.

The growth and histological differentiation of the walls of the ovary of a plant, originates what we call the pericarp, which is actually the fruit, excluding the seeds it contains. The pericarp is formed by an exocarp, or epicarp, and an endocarp, generally made up of epidermal tissues. The former covers the fruit and the latter the seed. Between the two is the mesocarp, which is formed by reserve parenchyma or sclerenchyma. There are plant species in which other parts of the flower besides the ovary are involved in the formation of the fruit. These are the so-called complex fruits, such as apples and cucumbers, in which the fruit is then formed by the pericarp plus other types of tissues. There are also fruits that are actually aggregates of many small fruits such as strawberries or blackberries.

Fruits are called dehiscent if they open at some point leaving the seeds free or indehiscent if the pericarp is firmly attached to the seed until it eventually decomposes. The three layers of the pericarp vary in structure and dimensions depending on the type of fruit, but in general we can differentiate two types of fruit according to their consistency: dry and fleshy.
